I discovered one of the “neat” things with this recipe exchange is hearing from people whom I have lost contact for a while. I got this recipe from Verna W. and I have not seen nor spoken for her for ages. Funny though how our circles of friends intersect.
Verna is a very good cook and baker, I used to get short bread cookies from her for Christmas, and her orange chiffon cake is out of this world.
So here is the recipe from her, except it is not so much as BBQ, but baked salmon. I am dying to try this one out:
2 to 3 lbs salmon fillet
5 large garlic cloves, chopped fine
3 tbsp parsley, chopped fine
3 marinated sun-dried tomatoes, chopped fine
1 tsp salt
1/4 cup olive oil
Combine garlic, parsley, sun-dried tomatoes, salt and olive oil. Place salmon skin side down on greased foil. Spread garlic mixture over salmon. Bake at 350 degrees for 15 minutes or until done.
